Dichloromethane is expressly approved in the EU for decaffeinating coffee. For roasted coffee, a strict maximum limit of 2 mg of DCM per kilogram of coffee applies. When these legal requirements are met, the process is considered safe for consumption.
In the CO₂ process, caffeine is extracted using carbon dioxide under high pressure. It does not use conventional organic solvents, but it requires complex equipment and considerable technical and energy input.
Water-based methods, such as the Swiss Water® Process, also avoid organic solvents.
