How is coffee decaffeinated?

The aim of all methods is to remove as much caffeine as possible while preserving the components of the bean that are important for taste and aroma as well as possible.
One of the most established methods is the DCM process using dichloromethane. DCM can dissolve caffeine from the bean very selectively, enabling comparatively gentle decaffeination that preserves the aroma. After extraction, the solvent is removed; the beans are then dried and roasted. DCM is characterized in particular by its selective caffeine extraction, good preservation of the flavor profile, and comparatively efficient process. Dichloromethane is expressly approved in the EU for coffee decaffeination. For roasted coffee, a strict maximum limit of 2 mg DCM per kilogram of coffee applies. When these legal requirements are met, the process is considered safe for consumption.
In the CO₂ process, caffeine is extracted with carbon dioxide under high pressure. It operates without conventional organic solvents, but requires complex equipment and significant technical and energy resources.
Water-based methods, such as the Swiss Water® Process, also avoid organic solvents. However, because coffee contains water-soluble components, they may require particularly careful process control to preserve the flavor profile as well as possible. Another option is decaffeination with ethyl acetate, which can be of natural origin but is also produced synthetically on an industrial scale.
The various methods therefore have different strengths and weaknesses.

Taking a close look at how a manufacturer decaffeinates and processes its coffee can therefore reveal a great deal about the quality of the final product.
Neither Arabica nor Robusta is, on its own, a quality indicator. More important are the careful selection and processing of the beans, as well as an aroma-preserving decaffeination process. Roasting also shapes the flavor. Those who prefer a strong, full-bodied decaffeinato can specifically look for a somewhat darker roast, which can produce more body and pronounced roasted flavors.
Important to know:
Whole beans preserve their aromas longer than pre-ground coffee. Ideally, the decaffeinato should therefore be ground immediately before preparation.
